I love a beautiful cupcake, and I very much want a cupcake to taste as good as it looks! Over the years I’ve tried many a Buttercream recipe, some good, some not so good. After many a request I am sharing my tried and tested Vanilla Buttercream recipe, and it really is so good!!!
Vanilla Buttercream
Ingredients
- 500 grams salted butter (salted helps cut through that sweetness and gives another layer of flavour)
- 350 grams – 400 grams of sifted icing sugar
- 1-2 tsp vanilla bean paste
Method
Now to ensure a beautiful, fluffy buttercream you want to whip that butter and I mean whip it!!! High speed for about 15 minutes! I scrape down the sides every couple of minutes, you want the butter to double in size and turn white in colour. Once it has, then and only then do I add the other ingredients, add your vanilla bean paste and whip until incorporated and then add the sifted icing sugar in batches, whipping in between adding more, and then whip for a couple of minutes once you have all your ingredients added.
You will have beautiful white, fluffy buttercream goodness!! I use Wilton food colouring gel to add colour as this won’t mess with the consistency of your buttercream. If you’re after a stiffer buttercream you can add more icing sugar or vice versa.
