{Weekly Bake} Choc Coconut Protein Balls…

Whilst my Sunday bake this week doesn’t actually involve any baking as such, it’s an extremely quick, healthy little snack which should hopefully keep my sweet tooth happy this week…while my children will be enjoying chocolate chip-cookies and chocolate brownies (recipes can be found on the blog also), insert crying face!!

Choc Coconut Protein Balls

Ingredients

  • 1/3 cup desiccated coconut
  • 1 tbsp. cacao powder
  • 60g fresh dates, pitted (soft)
  • 2 tbsp. natural vanilla protein powder
  • 1/3 cup almonds
  • 2 tbsp. water

Method

  1. Combine the cacao powder, dates, protein powder, almonds and water in a food processor and process until a sticky mixture is formed
  2. Divide the mixture into 5 piles and using the palm of your hands roll the mixture into firm balls
  3. Roll the balls into the coconut, ensuring all sides are coated and refrigerate
